Just like a Burger - Meatloaf

A classic recipe for one of the most underrated recipes there is. I always forget how easy and delicious meatloaf is, because to be honest, it typically doesn’t look very appetizing. I am starting to realize that meatloaf can be just as versatile as meatballs, where you really can stuff and top with so many different flavors giving it different taste each time. This is a great way to change it up for picky eaters and get them used to something and confident to try that same recipe with small variations each time.

For this meatloaf I wanted it to be like a hamburger in each bite. I added onions and cheese. Then topped it with some ketchup and caramelized onions. You can always add in mustard if you’d like, but I’m still a bit picky and haven’t learned to enjoy the taste of mustard.

If you are pregnant, nursing, or just looking for an extra nutrient boost - mix about 1 tablespoon of blended liver, or pate, into the raw meat. You won’t taste it, but it will add a huge boost of essential nutrients very cheaply.

An underrated dinner, filled with protein and with endless flavor combinations!

Cook Time: 30 minutes

Total Time: 35 minutes

Servings: 4

Ingredients  

  • 1 tablespoon of olive oil

  • 1/2 cup of oat flour (blend 1/4 cup of oats in a blender until the majority of it is like flour)

  • 1/2 White Onion

  • 1/2 Large Green Pepper (any color will be ok)

  • 3 Cloves of Garlic (can also sub 2 tsp garlic powder)

  • 1 lb of Ground Beef

  • 1/2 cup of Primal Kitchen Ketchup

  • 2 tbsp of Primal Kitchen Mustard

  • 1 cup of Swiss Cheese, shredded

Instructions:

  1. Start by making perfectly caramelized onions. These take about an hour of just having them slowly cook on the stove.

  2. While the onion are cooking preheat your oven to 350 degrees.

  3. Heat a pan over medium heat, add the olive oil and sauté the onion, green pepper, and garlic until soft.

  4. In a medium bowl mix sauteed vegetables, ketchup, mustard, and swiss cheese, and oat flour with the ground beef. Mix well, you may need to use your hands.

  5. You can either shape the ground beef on a lined baking sheet with raised edges to catch the juice, or you can place it in a bread loaf pan.

  6. Optional: Top with a little rubbing of ketchup on the top of the loaf.

  7. Cook for 45-50 minutes, or until cooked through.

  8. Top with caramelized onions - which should be done around the same time as the meatloaf!
