Sweetly Spiced Chicken Stew
I have been learning how to use spices, because I never grew up eating with anything other than chocolate, butter, and salt. I have loved the process, and it has taught me to experiment with foods from all around the world! Each country has a core set of spices they use, and so I have been trying out the different mixtures and really enjoying bringing the flavors to our dinner table. Plus, I think it is great practice for my girls to be exposed to a variety of flavors that are different than America’s sweet, sweet, and more sweet!
Now I always try to keep my recipes quick and easy, so often that means skipping steps that most recipes discuss. So I will just throw it all in the pot, or not actually brown the chicken. I find that the majority of the times, these steps create more dishes, and really aren’t super necessary. Therefore you could probably call this a One Pot Chicken Stew :)
For this recipe you will start by heating up your pan, and make sure you have oil the covers the entire bottom. Then add the chicken, brown them on both sides - but don’t cook them through yet! Next add some spices. In the same pot you will then add the broth, vegetables and dried apricots - then let it simmer for about 30 minutes, or the chicken is cooked through! Once the chicken is cooked, you can shred it and your stew is ready! Easy delicious, and full of so much flavor! I like to eat mine plain, but my husband eats his over a plate of rice for the extra carbs.
Ingredients:
Chicken - Try to get grass-fed, but really whatever your family eats will work.
Broth - Broth adds a greater depth of flavor, and more nutrients but if you don’t have any on hand you can just use water. With all of the spices, and chicken cooking in the water, it will taste delicious.
Cinnamon, Nutmeg, Coriander - I always use cinnamon, and occasionally nutmeg, but I love the flavor of all 3 of these in this stew!!
Onion, Carrots, Garlic - Great anti-inflammatory vegetables that have a whole host of health benefits.
Figs - I love adding figs to this recipe! Such a unique addition that adds just enough sweetness.
Fresh cilantro and parsley - Fresh is best when it comes to herbs. Plus I love sprinkling these everywhere I can for the added nutrients!

Ingredients
1 package of chicken (any cut that doesn’t have a bone)
3 tbsp olive oil
3 cups of bone broth, or chicken stock
1 tsp cinnamon
1 tsp nutmeg
1 tsp of coriander
1/3 cup of Apple Cider Vinegar
1 onion, diced
3 carrots, diced
3 cloves of garlic, diced
8-10 dried figs, cut into halves or quartered
Fresh cilantro and parsley
Instructions:
Heat a large pot on high heat, with olive oil completely covering the bottom. Once it’s hot, add the chicken and brown all sides.
Mix in spices and cook for about 1 minutes. Add in broth, apple cider vinegar, vegetables, and figs. Cook for 30-40 minutes, or until the chicken is cooked through.
You can serve as a stew, or on top of rice - sprinkle with fresh parsley or cilantro before serving!
