Bacon and Apple Grilled Cheese
I know in a sugar free recipe most people wouldn’t expect to see such an indulgent meal. But have I mentioned that I am cooking for a Toddler, Baby, and a Ultrarunner?? We do eat carbs in this family, but we are very careful to make sure there are no added sugar and we do not eat them glutinously. The bread we used for this recipe was locally made sourdough (I do often make my own when I have time) that only had 5 ingredients. Bread, yeast, flour, salt, water. We use goat cheese so we don’t have an overload of dairy, and then sugar-free bacon. Next time you go to purchase bacon, double check that is says ‘Sugar Free’ on the label - you would be surprised at how hard it can be to find! I often only see one or 2 brands that are sugar-free. The most important thing for us, is to eat with as little added sweetener as possible, to enjoy the natural sweet and flavors of the food we already have. And also, to make it quick and easy!!

When I make grilled cheese, we try to use Goat Cheese Cheddar as often as possible. I don’t think there are very many well made cheese’s in the US, and cheese made from Goat Cheese tends to be significantly less processed than Cow’s Milk.
Goat Cheese Cheddar - Cheese made from Goat’s Milk has a tad bit stringer taste than milk from cow’s but it is perfectly balanced with the addition of apple and bacon in this recipe. You could use regular Cheddar Cheese as well, whatever you have in your fridge!
Apples - Any color will due, red will add more sugar and sweetness than green. I like to peel my apples before hand because I find that makes it easier to chomp, rather than have the apples slide out.
Sugar-Free Bacon - Please double check that yours is sugar free! It is amazing all the sneaky and unnecessary places sugar is added. I also like to crumble the bacon so you get a little bit in every bite, rather than pull a whole piece of bacon out. This also makes it easier for my toddler to eat!
Sourdough Bread - If it is not fresh sourdough, it is probably still loaded with preservatives and added sugar. Try to find a local made bread, or make your own! There are a ton of quick bread recipes out there that require no kneading or anything - you just mix and bake.
Bacon & Apple Grilled Cheese

Ingredients
8 slices of Sourdough Bread
8-10 slices of Sugar Free Bacon, diced
1 Red Apple, peeled and thinly sliced
6 Slices of Goat Cheese Cheddar
Butter
Instructions:
Heat up a non-stick skilled and grease it with about 2 teaspoons of butter. Place each side of the bread down for about 2 minutes so they get lightly browned and toasted.
Assemble your grilled cheese. Do a layer of goat cheese, stacked with apples, and then bacon, and you can add a small layer of cheese on top to hold it all together. Top with the other layer of bread.
Cook on medium-low heat until cheese starts to melt, or bread starts to brown. Then flip and toast the other-side.
Repeat for all of the other sandwiches, adding extra butter each time.
