Black Bean PANCAKE Sandwich
This sounds pretty interesting doesn’t it? A black bean pancake sounds a bit odd, much less turning it into a sandwich. But hear me out! In this stage of life we are making sure our little ones are getting nutritious and filling that they love, especially ones high in iron. Beans fit the bill perfectly. They are cheap, they love them, and they are so easy to prep. Just open the can and boom, they are ready to be used. Even cheaper if you use dried beans and soak them, but a bit longer process.
So I have been wanting to make Black Bean Burgers for everyone for a while now, but needed them soft enough for my kids and I have heard how they are impossible to keep together. So I tried a couple recipes and low and behold, they tasted amazing but kept falling apart. So in comes the pancake creation..
I took my Black Bean Burger recipe, pureed some of the vegetables with the almond flour, and then added in 2 extra eggs and they made perfect little pancakes! Super easy, and we didn’t need a bun anymore, as they were the perfect little buns!
So for this recipe I of course used a can of beans, then I wanted to make sure to add some Vitamin C so I added in 1/2 of a bell pepper. I added an onion, almond flour, and of course eggs. So lots and lots of protein and some great fats from the eggs! For spices I used a Cajun Seasoning blend we have, but you could really use whatever you have. Paprika, cumin, oregano, basil, all would be great options as well. I added all the ingredients, except the beans, and pureed them until mostly smooth. I then added the can of beans, and using a fork smooshed them a bit.
Once I heated up the pan, I added a generous amount of Olive Oil and let them cook. I only wanted to flip them once so I made sure they were cooked very well before the first flip. When they take on this pancake form, they cook very similar to traditional pancakes so it is easy to tell when it time to flip - the edges are cooked through.
Of course I had to add bacon and cheese to complete the delicious and easy Pancake Sandwich.
Black Bean PANCAKE Sandwich
These sandwich’s sound unusual but are super high in protein, and iron. They are easy, and very customizable. You could add avocado or hummus, if you wanted to keep them vegan!

Ingredients
1 can of Black Beans, drained and rinsed
1/2 white onion, diced
1/2 green pepper, diced
3/4 cup almond flour (can sub oats as well)
2 tsp Cajun Spice Blend
3 eggs
Olive Oil
Optional - 5 slices of bacon, cooked
Optional - Swiss Cheese
Instructions:
Add onion, pepper, flour, Cajun Spice, and eggs to a mixing bowl and puree until smooth. This step can be skipped if you prefer a chunkier pancake but it may not hold its shape as well.
Add rinsed black beans to pureed mixture and mash with the back of a fork until the beans are broken up.
Place a non stick skilled on medium heat, and drizzle with about 1 tablespoon of olive oil. Create 6 pancakes, and try to only flip once the back is completely cooked through. Work in batches if need.
Meanwhile cook the bacon in the oven or stovetop.
Once everything is done assemble your Pancake Sandwich and enjoy!
