Better than Smuckers Jam
I grew up on the classic PB & J Sandwich, of course with sugar loaded white bread, peanut butter that was mainly oil and sugar mixed with some peanuts, and jam that was at least 30% sugar. Needless to say, I loved them and ate them almost everyday, but they definitely did nothing for my immune system and probably contributed to my awful skin for most of my middle and high school life. I love making my Jam with Chia seeds because not only am I using real fruit and chia, but the options are endless and I can make any flavor I feel like! I also use this to put in cookies, on top of yogurt, or on a updated Peanut Butter & Jelly sandwich for my girls.
For this Jam all you need is your fruit of choice and Chia Seeds, I typically use Frozen fruit, because as it thaws in the pan the extra water helps the chia make it Jammy, but if you use fresh fruit you can easily add in about 2 tablespoons of water.
Some of my favorite combinates:
Cherry and Plums
Peach Raspberry
Mixed Berry, (Blueberries, Raspberries, Blackberries
Mango and Blueberry
Raspberry Lime
In order to make this, you take about 1.5 cups of fruit, and boil them in some water on a pan. You may need to add 2 tablespoons of water to help heat them up and get all the juices out. Then mash the fruit, and add about 2 tablespoons of chia seeds. Take the pan off of the heat, and wait about 30 minutes and it will jell up to a spreadable consistency.
