Extra Fluffy Cake with Apple Crumble
I made this cake in the morning, and by midday over half of it was gone. My toddler was sneaking pieces, my husband ate a whole side, and our baby sitter couldn’t get enough. I couldn’t believe it, and it was so so easy to put together. I sweetened this with Dates that I had soaked in Goat’s Milk (you can use any type of milk, I just happened to have Goat’s in the fridge), added flour, baking powder and baking soda, topped with apples and pecans, and voila! A perfect fluffy, moist, cake that will trick even the biggest sweet tooths.
To make this cake, you need 12 dates. If your dates aren’t very soft (they don’t easily moosh between your fingers) then you should soak them in your milk for about 20-30 minutes. If your dates are already soft, then you can skip this step.
Next you will blend the date and milk, until a thickish paste forms. Move this mixture to a mixing bowl and mix in flour, baking soda and baking powder, and a pinch of salt. Stir well, and place in lined baking pan. Top with apples and pecans then cook and enjoy!
I used white all-purpose flour, but whole wheat flour would work as well! You can also play around with the toppings, try some different nuts or fruit! Walnuts would probably be a good choice, or some ground almonds.

Ingredients
12 Medjool Dates
1/2 Cup of Milk
1 cup of flour
1 tsp baking powder
1 tbsp baking soda
pinch of salt
1 apple cut into small cubes
1/2 cup of crushed pecans
Instructions:
Preheat your oven to 350 degrees, and line a 9 x 9 baking pan with parchment paper.
If your Medjool dates are not soft (easily smashed between your fingers), soak them in the milk for 20-30 minutes. If they are soft skip this step.
With a high speed blender or food processor, blend the dates and milk into a paste.
Move the paste to a mixing bowl and add flour, baking powder, baking soda, and salt - mix well.
Pour mixture into the baking pan, it will be thick and you can spread it out so it is even in the pan.
Top with the apple, the the pecan crumbles. You can swap these for other toppings of choice.
Bake for 40-50 minutes, or until a fork stuck in the middle comes out clean.
