It’s a Date, Caramel

Even with my sweet tooth, one thing I have never liked is icing. My daughter loves it, and I am always looking for things that are healthier, but that I can still top on her muffins, birthday cakes, etc, and she will still love it. Insert, Date Caramel. I love making this chunky for the extra texture, but you can also blend it up and make it silky smooth. This can be used in cookies, cakes, or anywhere else Caramel is called for, but instead of being sweetened with tons of sugar and corn syrup, you are only using dates!

It’s a Date, Caramel

This is the easiest recipe ever, and I guarantee it will be eaten in just a couple days. That is still a TON of sugar from all the dates, but it also comes along with fiber and antioxidants. I like to make mine with coconut milk, but you can use regular milk if you prefer.

Ingredients  

  • 8-12 pitted dates

  • 1/4 cups of coconut milk, more as needed (or any other milk you have on hand)

  • 1 tsp vanilla

  • Pinch of salt

Instructions:

  1. Add all the ingredients into a blender or food processor, and blend until smooth and creamy. You can stop just before for some tiny chunks if you like the texture to be a bit more substantial.

*These go great as a topping on our breakfast doughnuts!
